Add a generous helping of carrots, onions, celery and sweet bell peppers to make a delicious one pot meal. Garnish with a dollup of sour cream and serve over rice accompanied with a salad.

Cooking time: 2 hours on top of stove, 4-6 hours in crock pot. Makes 6-8 servings.

  • Did you know...

According to the Mayo Clinic, beans are a great way to get your daily dose of iron, phosphorous, magnesium (which the body needs to keep the nerves and muscles functioning) and potassium. And as an added bonus, they're low in fat and high in other good things, like dietary fiber and protein, meaning they'll keep you fuller longer.

Black beans, considered the healthiest of beans, have the highest antioxidant count and “potent inhibitory activity” against human colon, liver, and breast cancer cells. Not only are they high in antioxidants, but also they are high in ergothioneine, an unusual amino acid that protects our DNA and acts as an intramitochondrial antioxidant.

Beans have been shown to benefit people with type 2 diabetes due to their ability to decrease insulin resistance. The high levels of potassium in beans may lower the risk of stroke.
